While I'm working on the book, Moms of Sons Devotions to Go, I'm sorting through pictures of my "boys" and have to wonder where the time went. Jon (our youngest) is graduating from college next week and I still haven't sent him "homemade" chocolate chip cookies yet!

I guess there's still time right?

For all of you moms out there who are procrastinating, don't wait for the "perfect" time to do what you've always wanted to do...just do it!

So at 11:45 p.m., I'm making chocolate chip cookies! Oh, and if you don't have time for that, my mom just sent me this recipe (chocolate cake for one!).


THE 5 MINUTE CHOCOLATE CAKE FOR ONE PERSON........HOW NEAT!



5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)

Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well..
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT ! (this can serve 2 if you want to feel slightly more virtuous).
And why is this the most dangerous cake recipe in the world?
Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!

Connie, that recipe DOES sound fun - to make and to eat! Thanks for sharing it. I'm a mom of two sons, too, but mine are still at home, 16 and 13. I hope you got your chocolate chip cookies boxed up and sent off to your son. :o)

I know, Barb, I thought the same thing, but what a fun thing to do. I haven't tried it yet, but since both "boys" are away this Mother's Day (one doing a triathlon and the other at college), I just might have to treat myself!

The cake sounds really good. Dangerous for me right now. I've been fighting my weight. But, hey Mother's Day only comes around once a year so for one day I think I'll give myself permission to eat some sweets. Thanks for sharing this recipe.
